The Washing of the olives
Once harvested, the olives are immediately bring to the mill where they are washed to remove any impurities such as dust, leaves or branches.
The washing is done with fresh and clean water, using continuous flow washing systems that ensure the removal of impurities without damaging the fruit. The washing phase is crucial to maintain the purity of the oil, avoiding the presence of foreign substances that could alter its organoleptic profile.


The drying process
After washing, the olives are carefully dried to remove excess moisture, which could alter the taste of the oil and affect its durability. The olives are then prepared for milling.
It is important that the whole process takes place quickly, to avoid that the olives start to ferment or deteriorate, conditions that could compromise the final quality of the oil.
