Astrum Evo is born from the passion for the land and the twenty years of experience in the production of extra virgin olive oil in Sicily. It is not just a business, but a family tradition which has been handed down across generation. Every drop of our oil tells about the quality, tradition and care we put in the cultivation of the most valuable Sicilian varieties, such as Nocellara del Belice, Calamignara, Cerasuola and Biancolilla.
Working process

Our trees are grown in an environmentally friendly way, without the use of chemicals, giving priority to quality over quantity. The olives, harvested manually at the right degree of ripeness, are milled within a few hours and the oil is cold-extracted by mechanical methods. The result is a healthy oil, with an acidity of less than 0.8%, which satisfies the most demanding palates with a genuine and high quality product.
